Five 10 minute Meals!

I don’t know about you, but I do not LOVE cooking. I do it every single day so that my family can eat, but it is not “My thing.” My sister LOVES to cook, it brings her joy, and she views it as an escape when shes stressed. That is soooo not how I view cooking. Ill be completely honest cooking feels like a chore to me most days. My family tells me I am actually pretty good at it (they are probably just being nice) but that still doesn’t make me excited about cooking.. Now baking? I like baking. I find some sense of accomplishment when I make a delicious, cool looking cake, but a meatloaf.. Nope, no enjoyment there. SOOO I figured I would share 5 of my go to meals that my family loves, and that are quick and easy, and for the most part pretty healthy. Now when I say 10 mins, I mean prep time, not actual cooking time, so take that into account.

 ~hADDOCK baked fish~

What you need:

Step 1: Put your Haddock on a piece of tin foil

Step 2: Roll the sides of the tin foil up to create a boat shape around your Haddock

Step 3: Add olive oil, just sprinkle it on top of your fish, your don’t need a ton, just enough for your fish to cook in.

Step 4: After washing your Lemon, use a grater to scrape the zest (the outer peel) of a lemon onto the top of your fish. Then cut your lemon in half and squeeze additional lemon juice onto the fish. I also seasoned with slat and pepper.

Step 5: Close your tin foil “boats” like this:

and throw them in the oven!! Bake at 425 degrees for about 25 mins (depending on how thick your fish is, this may vary. The nice thing about these boats is they are easy to peak inside to see if the fish is done! 🙂

Finished product! I paired it with a baked potato and salad because I did not have a ton of time to make sides that night.

*TIP* Did you know you can put a baked potato in the microwave?? I do this when I am in a rush! Just wash, poke holes in the skin and cook for 5 minutes, flip and cook for another 5 mins.. or until soft. The skin is not as crispy as it is when done in the oven, but it works when you are short on time 🙂

~CROCK POT CHICKEN TACOS~

What you need:

Step 1: Combined Chicken (about 3-4 breasts), black beans (drain the beans first),  1/2 bag of corn and the whole jar of salsa in the crock pot.

TIP: **Forgot to take the chicken out of the freezer?? Doesn’t matter!! You can use FROZEN chicken in this recipe! So literally this recipe takes little to no preparation!**

Step 2: Cook on high for 6-8 hours

Step 3: Shred the chicken

Finished product: I serve it on a warmed soft taco (tortilla) and you can add whatever you want to the top, cheese, sour cream, lettuce…And Viola.. Dinner is made with little to no effort at all!

~bROWN SUGAR SALMON~

What you need:

Step 1: Cover the base of your pan in Olive Oil, not thick, just a thin layer. Let it warm up and then place the Salmon on top of that.

Step 2: Cook the Salmon half way through (It will turn a lighter pink in color when cooked). Once its cooked half way through, flip them. ONLY FLIP ONCE the whole time cooking!!

Step 3: Once the Salmon is flipped add a small amount of brown sugar to the top, then season with the Montreal Steak seasoning (Yes I know its for streak, but its great on fish too!!)

Once fish is cooked all the way through (You can check this by looking at the side of the fish, it should be a whiter pink, not so orangey pink haha).. Like my descriptions?!

Final product: I served with steamed Asparagus and roasted Red Parmesan Potatoes.

**The potatoes are super easy too!! Just cut, throw on a baking pan, sprinkle with olive oil, salt and pepper and parmesan cheese and bake at 425 degrees for 30 mins** Yumm!! So delicious!!


~Honey Cracker Chicken~

What you need:

Step 1: Preheat oven to 400 degrees

Step 2: Take the roll of crackers and olive oil and combined them into a bag, and crunch the crackers together with the olive oil until they are coated ** You can also do this with melted butter, which in all honesty is better, but I was trying to keep these recipes as healthy as possible**

Step 3: After washing, and patting dry your chicken, place one breast at a time into the ziplock bag of crackers and coat each one.  (I apologize I do not have anymore pictures for this specific recipe… a person who will remain unnamed deleted them from my phone 😉 I will update this post with pics when I make this recipe again) 🙂

Step 4: Place the chicken on a baking pan, and put any remaining cracker mix on top of each breast.

Step 5: Drizzle each breast with honey (I do a decent amount, honey is actually very good for you, and makes this a little sweet which my kids love)

Step 6: Bake at 400 degrees for 30-35 mins or until cooked (cut breast in half to make sure the chicken is completely white inside, there should be no pink at all)

I served this with rice and corn.

~cROCK POT BEEF STEW~

What you need:

Step 1: Cut your potatoes into half, and then into fourths

Step 2: Coat your beef cubes with flour, the season with salt and pepper

Step 3: Add Carrots (as few or as much as you want, I load our stew up with them), the whole container of beef stock, peppers, onions and celery (Mine are all in those zip lock bags- I had them frozen from our garden) You can also just add celery salt if you are out of celery.

Step 4: Cook on high for 6-8 hours

I served it with biscuits I made from Bisquick.
